Bacon, Egg and Cheese Breakfast Sliders

These Bacon, Egg and Cheese Breakfast Sliders are one of my favorite breakfast recipes for when you’re serving a crowd or want to meal prep. With store-bought rolls, you simply top with fluffy eggs, melty cheese and crispy bacon then bake until the top is deeply golden brown.

Ingredients

  • 1 package Kings Hawaiian Rolls
  • 6 slices pepper jack cheese
  • 1 cup shredded cheddar cheese
  • 8 large eggs
  • 6 slices bacon
  • 1 tablespoon salted butter
  • 1 tbsp sesame seeds

Instructions

  • Preheat the oven to 350°F.
  • Cook the bacon. Warm a large nonstick skillet on medium heat and cook the bacon until crispy, flipping once halfway through, about 10 minutes. Remove from the pan and set aside. Leave the rendered bacon fat in the pan! 
  • Whisk the eggs. Crack all the eggs into a large bowl. Add the salt and pepper, then whisk to combine well.
  • Scramble the eggs. Lower the skillet to medium-low heat. Add the egg mixture into the bacon fat that is left in the pan and gently scramble until just set and still a little wet. About 5 minutes. 
  • Slice the rolls. Slice the bread in half lengthwise using a sharp serrated knife. Place the bottom half of the rolls in a baking dish. 
  • Layer the sliders. On the bottom of the rolls, layer the cheese slices, followed by the scrambled eggs, then shredded cheddar, and finish with the cooked bacon strips. 
  • Top with butter and sesame seeds. Put the top half of the Hawaiian rolls on. Then pour the melted butter over top and sprinkle with sesame seeds.  
  • Bake. Put into a preheated oven at 350°F for 10 minutes until deeply golden brown.
